Mystery Pudding

A recipe my dear Mom used to make for us when we were growing up and my brother, Paul, still craves it - MYSTERY PUDDING. Enjoy!

Ingredients:

1 egg
1 tsp vanilla
2 cups drained fruit cocktail
1 cup sugar
1 cup flour
1 tsp baking soda
1/2 cup brown sugar
1/2 cup chopped pecans
whipped cream topping

Beat egg and vanilla. Stir in drained fruit cocktail.

Mix sugar, flour, and baking soda. Blend the two mixtures. Pour into a greased 9x13 pan.

Mix brown sugar and nuts, sprinkle on top of cake.

Bake at 325 degrees for 1/2 hour (may have to adjust for high altitude). Cut into squares and serve with whipped cream topping. Best served warm. Serves 8. Happy times...
