whole grain crisped rice squares


Here's a super easy, no-bake recipe for a quick treat for you and your family: Crisped Rice Squares using a cereal called "ORGANIC CRISPY BROWN RICE" made by EREWHON. I buy it at Vitamin Cottage, a natural foods store, uses whole grain brown rice, and I buy the "No Salt" added cereal.

Ingredients:

9"x13" glass or metal cake pan, greased with cooking oil or margarine

6 and 2/3 cups Erewhon crisped rice cereal
1 1/2 TBLS margarine
1 jar, 7 ounces, of marshmallow cream
1 cup semi-sweet, bittersweet, or milk chocolate choc. chips

In large micro-wave oven proof bowl, add the jar of marshmallow cream and 1 and 1/2 TBLS margarine. Microwave on power 9 (next-to-the highest power) for 2 minutes, stir well, microwave on power 9 for 1 minute. Take bowl out of microwave, quickly add 6 and 2/3 cups cereal, stir very well so all cereal is covered with marshmallow mixture.

Spoon this cereal/marshmallow cream mixture into greased cake pan, spread with spatula so even & smooth on top.

Put 1 cup chocolate chips in smaller micro-wave oven proof bowl, cook on power 4 (about medium power) for about 4 minutes or 4 minutes 30 seconds. Stir well, chips should be about melted. If not and if stiff still and not stirring well, add about 1 tsp or so of margarine and about 1 TBLS water, microwave again on power 4 for about 1 min. 30 seconds, stir again. Should be able to pour now on top of cereal/marshallow cream mixture in cake pan, spread chocolate over top with spatula till smooth.

Put cake pan in refrigerator for about 1 hour till chocolate topping is hard. Cut in squares, enjoy with a cup of coffee or tea! Delicious!
